It’s not every day that you get to roast an entire pig, and frankly, it seems like a daunting task. But this weekend executive chef Victor Albisu of BLT Steak can break it down for you, as well as show you how to break down the whole hog.
The April 23rd class will run from 12:30 until 3 PM and is $100 per person. The class includes a four-course lunch and cooking demonstration. At the end, you get to feast on lechon asado, whole roasted suckling pig, crispy pig ears and artichokes, a valencia salad with Iberico ham and a chorizo stuffed pork loin. In hog heaven, yet?

This yearly competition travels the US in search of the “Prince / Princess of Porc” and has 5 local Chefs go head-to-head in a pig preparation throw down. Last year’s Prince, R.J. Cooper of Vidalia returns to defend his title and chefs from Bourbon Steak, Bibiana, Eola and Westend Bistro will try to usurp him. Lots of Pre-cooking, braising, grilling, pressing, pickling, rubbing, smoking, searing, saucing, spicing, injecting, marinating, etc. is involved and top-chefs have been known to use the entire animal.
Tickets for the event go for $125, and guests not only get to enjoy some tasty pork, but will witness a whole pig butcher demonstration, taste great wines, brews and enjoy a plethora of pig perfect desserts. There will also be an after party at a location to be determined.
Every year around this time, camera shutters from around the world open and close, capturing thousands and thousands of photos of our beloved cherry blossoms. You see shots of the blossoms singled out against the brilliant blue sky, shots that show dense clusters of pink, blossomy goodness, shots of the hords of tourists that make their annual pilgrimage to the Tidal Basin, and even shots of clowns scaring the tourists away. But how often do you see a pig with a mohawk, dressed in a pink cherry blossom dress and wearing pink tinted goggles? For me the answer is simply, “Never.”

I’ve lived in DC for about five years now, and while many area photographers never seem to get tired of taking cherry blossom photos, it has lost its luster with me. That’s why it takes an unusual shot like this one to get my attention, even if I do end up feeling sorry for the pig. I guess life could be worse. After all, she could be sitting next to some eggs and home fries at the Florida Avenue Grill.
